This type of tortelli has a special, savoury zolfini bean filling with a creamy consistency, enclosed in rough-textured pasta made with durum wheat semolina and Tuscan extra virgin olive oil. Zolfini beans differ from other beans for their small size and very fine skin; they are more digestible and have a good protein content. They owe their name to their pale yellow colour similar to sulphur, that marks them out from other kinds of beans. These characteristics are derived from the soil in which they have been growing for centuries, the land of the “Florentine Valdarno”, representing its excellence.
