Italy has 300 certified pasta shapes<\/strong>, in which we can find common shapes like spaghetti<\/em> and regional specific ones like orecchiette<\/em>. Each pasta shape can be combined only with particular sauces<\/strong>, because otherwise the taste wouldn\u2019t be as good as it would be with the right combination.<\/p>\n

The most popular pasta shapes are:<\/p>\n

    The shape of pasta corresponds to its consistency.<\/strong> In fact, each one has specific cooking time, taste and palatability.<\/p>\n

    Every pasta format has to pass a quality test.<\/strong> The parameters which are verified are aspect, cooking resistance, \u201cstrength\u201d and resistance to chewing.<\/p>\n

    In this process pasta is overcooked, in order to check the time lapse between al dente<\/em> cooking<\/strong> \u2013 that is when pasta is cooked for time indicated on the packaging, so it remains soft outside and firm inside<\/strong> \u2013 and the moment when it becomes uneatable.<\/p>\n

    Some combinations are obvious for Italians, for example we all know carbonara pasta has to be prepared with spaghetti<\/em>, or arrabbiata has be prepared with penne<\/em>.<\/p>\n

    Teflon-drawn<\/strong> pasta is smoother and yellowy, while bronze-drawn<\/strong> pasta is rougher and lighter.<\/p>\n

    We can distinguish the types of pasta basing also on the size, the ingredients and the texture.<\/p>\n

    The size of pasta can be short or long.<\/p>\n

    Short and holey<\/strong> pasta is perfect with processed sauces, because it can hold them better. Whereas, short and no-holey<\/strong> pasta can be combined with simple sauces. There are also super short shapes which are perfect for soups.<\/p>\n

    Long<\/strong> pasta is more versatile, so it can be combined with lots of sauces. It can be also holey, like bucatini. But be careful, don\u2019t break it!<\/strong> Long pasta has to be cooked and eaten as it is, regardless of its length.<\/p>\n

    With ingredients we refer to dry pasta<\/strong>, made with water and flour, and egg pasta<\/strong>, made with egg and flour.<\/p>\n

    Dry pasta is can be smooth or ridged. The ridged one is obviously more suitable with rich sauces, because it holds them better.<\/p>\n

    Egg pasta is great with processed sauces, because it is rougher and as a result it holds better the sauce. Also, we can add to the dough some herbs or vegetables \u2013 for examples spinach or potatoes \u2013 to obtain a richer taste.<\/p>\n

    The texture can be smooth or rough.<\/p>\n

    Smooth<\/strong> pasta can be combined with light sauces<\/strong>, because this type retains little sauce, so for example it can be cooked with vegetables or fish sauces.
