Handed down to us by the traditional cuisine of the Sienese Maremma, their square and soft shape conceals a tasty blend of fresh ricotta and spinach leaves, wrapped in a layer of pasta made with selected durum wheat semolina, soft wheat flour, and fresh chicken eggs. They are excellent with any type of condiment.
